Copycat Broccoli Cheddar Soup from Panera

I get excited every time my Food Network Magazine arrives in the mail. I always turn to the Copy That section, where they always have a great copycat recipe. Through this section I have learned how to make those great soft pretzels that you get at the mall, wonderful frozen yogurt, and those fantastic Cheddar Bay Biscuits like they have at Red Lobster. This edition of Food Network magazine has the copycat recipe for Panera's Broccoli Cheddar soup, served in bread bowls. Needless to say, I ran to the store right away and bought the ingredients necessary to make this soup. You can find the recipe here on the Food Network.

This soup recipe is velveety smooth and sinfully delicious! I loved it so much that I am craving it again and will be making it very soon! Altogether, the recipe takes about 1 hour to make, but it is seriously good and very worth it. This is a must make if you are a broccoli cheese fan. I am submitting this to Deb over at Kahakai Kitchen for Souper Sundays.

All in all, we got about 5 inches of snow here in Kentucky. Five inches is a pretty big snowfall for this area. The schools are closed and even some stores in the mall closed early last night. The kids aren't used to this much snow and they just had a ball. Perfect evidence of a good time in the picture below.

  2. Snow is so much fun for kids, less so when we grow up and have to drive to work in it. lol.

    Lovely looking soup,Broccoli and Cheddar sounds devine. Is that a "biscuit" on the top. I always hear biscuits, or grits, and we never know what they are. Biscuits in the UK are what you would call Cookies. Although they have Cookies in the UK too, which are a type of Biscuit. Yes confusion rules.

    That is such a bummer that your power cord is ruined. Could you get one at Best Buy or an electronic store? What type computer do you have cause I may have an extra Dell cord I can send you.

  6. 1) Your son is just adorable. How come when your a kid you love this horrid weather, and when your an adult you hate it?
    2) I love Panera. When I'm visiting my mom in america we love to go there for lunch together. Awesome food! I love it that you did a copycat. I try to do the same when I like something.

    We only got some snow and a lot of ice, but at this moment, my 10 y/o is outside sledding down the road for about the 10th time today.

  13. Delicious. Perfext. I love how kids like snow. As far as I am concerned - it can melt and go away. But I remember the kid days and love their faces. Now the broccoli soup is a keeper!

  18. I love hearing all of these stories about schools closing because of such small amounts of snow. Five inches wouldn't even warrant a delayed school opening here! So funny but so much fun for you and the kids.

    This soup looks amazing! I adore Panera bread, but would love to learn how to make their soups at home. Fantastic!

  20. Awww. What a cute picture! We've got tons of snow up here in N.E Ohio. School was cancelled here on Friday too.

    The soup looks delicious. I made a batch of broccoli cheese soup this week too. It's my husband and daughter's fave.

    I've got to get a subscription to Food Network magazine. Everytime I pick one up I find tons of recipes that I want to try.

  23. I earmarked that soup too! Hope its as good as it looks. You can't go wrong with broccoli and cheese soup from Panera Bread Co. My hubby used to work there when we were in Florida, but I haven't seen one here in NC. And that grin from ear to ear is priceless.

  24. I chuckled when you said that the schools were closed because of 5 inches.Try 6ft(last year here in my neck of the woods (Colorado).... a force of Mother Nature that finally earned us a snow day LOL! Your little one is cute!

  25. That's my favorite section in my Food Network magazine too--I still want to try the remake of the Pinkberry Frozen Yogurt!! :-) Unfortunately broccoli cheese soup is about the only soup I don't like, but all my fam is a fan of it, so I could still give it a shot!
