Pot Roast and Mashed Potatoes, Pioneer Style

Tender, flavorful, fragrant and comforting are all words I would use to describe pot roast. Serve it up with creamy mashed potatoes and you are instantly transported back to Mom's Kitchen.

Everyone has their own recipe for pot roast. I like to start with a shoulder cut, just because I think it is the most tender. I also prefer to cook my pot roast in a crock pot rather than the oven. There are a lot of ways I cook my pot roast. Sometimes I throw in a jar of pepperocini peppers and let the roast cook in the peppers and their juice. I love to shred the roast and reserve the peppers and serve on a sandwich bun. Sometimes I do the traditional dried french onion soup mix and beef broth. Other times I throw in a packet of taco seasoning in case I want to make tacos, burritos, enchiladas or taquitos. The crock pot never lets me down.

Open to new possibilities, I decided to try the Pioneer Woman's Pot Roast. Ree's recipe is different than mine in several ways. First, she likes to use a chuck roast. Secondly, she cooks her roast in the oven. Lastly, she sears her onions, carrots, and roast before roasting in the oven. I have to admit, I was intrigued by the idea of searing the onions and carrots and was excited to give it a try.

I served the pot roast with PW's Creamy Mashed Potatoes. Loaded with cream cheese, butter, and half and half, the potatoes are insanely good. Definitely not your every day mashed potatoes, but so worth it. For the best results, make them a day ahead, refrigerator overnight, and bake the next day. Results/Notes: This pot roast was definitely a winner! My husband (meat lover that he is) said that this was probably the best pot roast I have ever cooked. In fact, he and I battled over the leftovers! I like the idea of searing the carrots and onions before roasting. Ree simply cuts her onion in half and sears each half. Although I like this concept, the onion fell apart while roasting and some of the pieces didn't have much color. Next time, I will slice the onion and give it some color before adding to oven. Other than that, this was simply delicious. A wonderful dinner, with leftovers and all for around $10 total.

  1. This is one good lookin' pot roast and the potatoes sound amazing. I'm like you...I cook all of my roasts in the crock pot. I've never tried it in the oven. I guess that I'll have to try.

    I love all of your ideas, especially throwing in a packet of taco seasoning in case you want to make tacos or burritos with the leftovers.

  4. Such a classic meal! My dad is a huge meat and potatoes guy, so I know he would love this! I never heard of a roast being cooked in the oven, I always assumed crock pot was the only way. I definitely think it's the best way! I usually will throw in 1 can of coke, 2 apples, onions, and carrots. The coke really makes it tender and the apples lend a slightly sweet contrast to the veggies.

  5. Looks drool-worthy, for sure. My mom always used chuck because it was a well-marbled, though inexpensive, cut. The searing is something I'll mull over. I don't see why you couldn't sear, then toss in the slow cooker.

  7. Great picture. Pot roast w/ mashed potatoes...Yum! Unfortunately, I'm usually out-voted and we have it w/ rice. I've never seared the veggies, but I do like to sear the roast and cook it in the oven.

  8. Mmmm...I love Ree's recipes. Definitely not food I could eat every day though, since I'm not nearly as active as they are on that ranch! I don't know how she manages her figure. You made all that for about $10? Wow! Great recipe for our budgets!

  9. There is nothing like a good pot roast. I do mine on top of the stove! But love the idea of searing the vegetables first. Yes - would definitely add flavor. Beautiful roast!

  12. I am all about the crockpot love as well. That is my tried-and-true way of making pot roast. I would definitely be open to trying this though. It looks fantastic! And if the husband wanted seconds...you know it was good.

    I've always used chuck for my pot roast but that's just because I'm cheap like that;)

  18. That sounds delicious! And I love the concept of making the potatoes the day before then bake, for some reason I always end up with a mess when I make mashed potatoes. This way I could have it made and ready to go and no mess! :)

  22. It looks amazing! My favorite veggie is onion so they really caught my eye. You are right everyone has their own pot roast, but I agree I need to change it up - Ill have to try Ree's.
