I've never had risotto that impressed me. I just keep waiting for that "aha moment" but it just doesn't do it for me yet. I like the way you explain how versatile it is--fancy-pants dish or hodge-podge of leftovers. As much as I like risotto, though, I never seem to experiment. It's either mushroom or lemon risotto with me. I should get out more!
